Rinse the chicken pieces under cold water and pat them dry with paper towels. Season them generously with salt and pepper on all sides to add a burst of flavor.
Heat a large skillet over medium heat and add a splash of olive oil. Once the oil is hot, carefully place the chicken pieces in the skillet, skin-side down. Sear them for about 5-6 minutes until the skin turns golden brown and crispy.
While the chicken is browning, grab an orange and zest it using a fine grater. Once you have the orange zest, squeeze the juice out of the orange and set it aside. Sprinkle the orange zest generously over the chicken in the skillet.

Reduce the heat to low and cover the skillet. Let the chicken simmer in the flavorful juices for about 15-20 minutes, or until cooked through. To check if it's done, insert a kitchen thermometer into the thickest part of the chicken. It should read 165°F (74°C). Once cooked, remove the chicken from the skillet and let it rest for a few minutes. Serve it hot and enjoy!
