Prepare the Pancake Batter

In a large mixing bowl, combine 2 cups of all-purpose flour, 2 tablespoons of sugar, 2 teaspoons of baking powder, and 1/2 teaspoon of salt. Whisk together until all the dry ingredients are fully incorporated. In a separate bowl, beat 2 eggs and then add 1 and 1/2 cups of milk and 2 tablespoons of melted butter. Mix well. Pour the wet ingredients into the dry ingredients and stir until just combined. Don't overmix, a few lumps are totally fine.

Heat the Pan

Place a large non-stick skillet or griddle over medium heat. Add a pat of butter and spread it around the pan until melted and evenly distributed. You don't want your pancakes sticking to the pan, that's a flipping catastrophe!

Pour 1/4 cup of batter onto the hot pan for each pancake. Cook until bubbles start to form on the surface, then flip and cook for another 1-2 minutes, or until the pancake is golden brown on both sides. Repeat with the remaining batter, adding more butter to the pan as needed.
