In a large mixing bowl, combine 1 cup of all-purpose flour, 2 tablespoons of sugar, 2 teaspoons of baking powder, and a pinch of salt. In a separate bowl, whisk together 1 cup of milk, 1 egg, and 2 tablespoons of melted butter. Gradually add the wet ingredients to the dry ingredients, whisking until the batter is smooth and no lumps remain.
Heat a non-stick skillet or griddle over medium heat. Grease the surface with a little butter or cooking spray. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another minute or until golden brown. Repeat until all the batter is used, and stack the pancakes on a plate.
Take a pancake, place it on a serving plate, and drizzle with maple syrup. Add another pancake on top and repeat until you have made a glorious stack of pancakes. Finally, crown your pancake stack with a generous pile of fresh fruit, such as sliced strawberries, blueberries, bananas, or whatever fruity delights your heart desires.
