Whip up the pancake batter

In a large mixing bowl, combine 1 cup of all-purpose flour, 2 tablespoons of sugar, 2 teaspoons of baking powder, and a pinch of salt. In a separate bowl, whisk together 1 cup of milk, 1 egg, and 2 tablespoons of melted butter. Gradually add the wet ingredients to the dry ingredients, whisking until the batter is smooth and no lumps remain.

Cook the pancakes

Heat a non-stick skillet or griddle over medium heat. Grease the surface with a little butter or cooking spray. Pour 1/4 cup of batter onto the skillet for each pancake.
