Handle the batter with care, flipping pancakes can be tricky, and be careful not to overmix the batter as it may result in flat pancakes.
In a large mixing bowl, whisk together 1 and a half cups of all-purpose flour, 3 and a half teaspoons of baking powder, 1 tablespoon of sugar, and a pinch of salt until well combined.
Create a well in the center of the dry ingredients and pour in 1 and a quarter cups of milk, 1 beaten egg, and 2 tablespoons of melted butter. Gently whisk the wet ingredients into the dry ingredients until just combined. It's okay if there are a few lumps!
Allow the batter to rest for about 10 minutes. This will help activate the baking powder and create those fluffy pancakes we all love.
While the batter is resting, preheat a non-stick skillet or griddle over medium-low heat. You want the pan to be hot, but not too hot, or else your pancakes may burn.
Once the pan is hot, lightly grease it with butter or cooking spray. Pour about 1/4 cup of batter onto the pan for each pancake. Cook until bubbles form on the surface of the pancakes, then carefully flip them over with a spatula. Cook for another minute or two, until golden brown and cooked through.
Transfer the cooked pancakes to a plate and keep them warm in a low oven while you finish cooking the rest. Serve your fluffy pancakes with your favorite toppings, such as maple syrup, fresh berries, or a dollop of whipped cream. Enjoy!
