In a large bowl, combine 1 cup of creamy peanut butter with 1/2 cup of powdered sugar. Mix well until the sugar is fully incorporated and the mixture is smooth and creamy.
Divide the peanut butter mixture equally into three separate bowls. Use food coloring to dye one portion yellow, another blue, and leave the third portion undyed. Stir each bowl until the color is evenly distributed.
Start by spooning a layer of the yellow mixture into the popsicle molds, filling them about 1/3 of the way. Tap the molds gently on the counter to remove any air bubbles. Follow with a layer of the blue mixture, then finish with the undyed peanut butter mixture to create a tri-colored effect. Insert popsicle sticks into the molds, leaving enough length to grip the popsicles later.
Place the popsicle molds in the freezer and let them freeze for at least 4 hours or until solid. Once fully frozen, remove the popsicles from the molds by running warm water over the outside of the molds for a few seconds. Gently pull on the sticks to release the popsicles and serve them up to your cosmic crew!
