Prepare the Rainforest Marinade

In a small bowl, mix together 3 tablespoons of soy sauce, 2 tablespoons of honey, 1 tablespoon of minced ginger, 1 clove of minced garlic, and a squeeze of lime juice. This marinade will infuse our roulades with the vibrant flavors of the rainforest.

Pound and stuff the chicken breasts

Place a chicken breast between two pieces of plastic wrap and gently pound it with a meat mallet until it's about 1/4 inch thick. Repeat with the remaining chicken breasts. Then, spread a tablespoon of cream cheese on each pounded chicken breast, followed by a layer of spinach leaves. Roll up the chicken breasts tightly and secure them with toothpicks.

Sear the roulades

Heat a tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken roulades and sear them for about 2 minutes on each side until golden brown. This will help to seal in the juices and create a delicious crust.

Simmer in rainforest goodness

Pour the rainforest marinade over the seared roulades in the skillet. Reduce the heat to low, cover the skillet, and let the roulades simmer for about 10 minutes to fully cook the chicken and allow the flavors to meld together.
