In a blender, combine 3 scotch bonnet peppers, 4 green onions, 4 cloves of garlic, 1 tablespoon of fresh thyme leaves, 2 teaspoons of ground allspice, 1 teaspoon of ground cinnamon, 1 teaspoon of ground ginger, 1 teaspoon of ground nutmeg, 1 tablespoon of brown sugar, 1 tablespoon of soy sauce, 1 tablespoon of vegetable oil, and the juice of 2 limes. Blend until smooth.
Place your chicken pieces (about 2 pounds) in a large bowl or resealable bag. Pour the marinade over the chicken and make sure each piece is coated evenly. Seal the bag or cover the bowl and let the chicken marinate in the refrigerator for at least 2 hours, or overnight if you want an extra punch of flavor!
Preheat your grill to medium-high heat. If you're using a charcoal grill, wait until the coals are covered with gray ash before cooking. This will give your chicken that delicious smoky flavor.
Remove the chicken from the marinade and shake off any excess. Place the chicken on the grill and cook for about 6-8 minutes per side, or until it reaches an internal temperature of 165°F (75°C).
Once the chicken is cooked through, remove it from the grill and let it rest for a few minutes. Serve your juicy, flavorful Jerk Chicken with a side of rice and beans or some grilled pineapple for the perfect Jamaican feast.
