Handle the jerk seasoning with care as it can be quite spicy. Make sure to marinate the chicken in a covered container in the refrigerator to avoid cross-contamination. Always practice safe food handling and cook the chicken to an internal temperature of 165°F (75°C) to ensure it's fully cooked.
In a bowl, combine 2 tablespoons of jerk seasoning, 1 tablespoon of soy sauce, 2 tablespoons of olive oil, 1 tablespoon of brown sugar, 2 cloves of minced garlic, 2 tablespoons of lime juice, and a pinch of salt and pepper. Mix everything together until well combined.
Place the chicken pieces in a resealable bag or a covered container. Pour the marinade over the chicken, making sure each piece is coated evenly. Seal the bag or cover the container and let the chicken marinate in the refrigerator for at least 2 hours, or ideally overnight, to allow the flavors to penetrate the meat.
