Gather all the necessary ingredients for your spicy chorizo sausages. You will need: - 1 pound of ground pork - 2 tablespoons of smoked paprika - 1 teaspoon of cayenne pepper - 1 teaspoon of garlic powder - 1 teaspoon of salt - 1/2 teaspoon of black pepper - 1/4 teaspoon of ground cloves - 1/4 teaspoon of dried oregano - 1/4 teaspoon of dried thyme - 1/4 teaspoon of ground coriander - 1/4 teaspoon of ground cumin - Natural hog casings (optional)
In a large mixing bowl, combine the ground pork, smoked paprika, cayenne pepper, garlic powder, salt, black pepper, ground cloves, dried oregano, dried thyme, ground coriander, and ground cumin. Mix well until all the spices are evenly distributed and fully incorporated into the meat. If you're feeling adventurous and want to stuff the sausages, soak the natural hog casings in water according to the package instructions and set them aside.
Take a handful of the seasoned meat mixture and shape it into a sausage shape. If you're using the natural hog casings, carefully slide the soaked casing onto a sausage stuffer or a piping bag fitted with a large round tip. Fill the casing with the meat mixture, leaving enough space to twist and link the sausages.
Preheat your grill or a pan over medium heat. If using a pan, add a small amount of cooking oil to prevent sticking. Cook the chorizo sausages for about 4-5 minutes per side, or until they are nicely browned and cooked through. If you stuffed the sausages into casings, be sure to cook them thoroughly to ensure food safety.
Once cooked, remove the spicy chorizo sausages from the grill or pan and let them rest for a few minutes. Serve them on a plate and savor the intense flavors. They are perfect as a standalone snack, in sandwiches, or added to your favorite recipes. Enjoy!
