Thinly slice your favorite veggies like avocado, cucumber, carrots, and bell peppers. Set them aside in separate bowls.
Rinse 1 cup of sushi rice a few times until the water runs clear. Cook the rice in 2 cups of water in a rice cooker or on the stovetop. Let it cool slightly.
In a small saucepan, combine 2 tablespoons of rice vinegar, 1 tablespoon of sugar, and 1 teaspoon of salt. Heat over low heat until the sugar and salt dissolve. Pour this mixture over the cooked rice and gently mix it in, using a wooden spatula.
Place a bamboo sushi mat on a clean surface. Cover it with a sheet of plastic wrap or a Ziploc bag to prevent sticking.
Lay a sheet of nori (seaweed) on the prepared sushi mat. Wet your hands with water to prevent sticking. Spread a thin layer of seasoned rice on the nori, leaving a small space at the top edge.
Place your desired vegetables in a line along the center of the rice. You can also add a touch of vegan mayo or a sprinkle of sesame seeds for extra flavor.
Using the sushi mat, gently roll up the nori, rice, and vegetables into a tight cylinder. Apply gentle pressure while rolling to ensure the roll holds its shape.
Using a sharp knife, carefully slice the sushi roll into bite-sized pieces. Serve with soy sauce, wasabi, and pickled ginger on the side.
