Rinse 1 cup of sushi rice under cold water until the water runs clear. Then, cook the rice according to the package instructions. Once cooked, transfer the rice to a large bowl and let it cool slightly.
While the rice is cooling, prepare your veggies. Slice half a cucumber, half an avocado, and 1 carrot into thin strips. You can also add other veggies like bell peppers, radishes, or sprouts for extra crunch and flavor.
Cut 4 nori sheets in half to create 8 smaller sheets. Place one of the smaller nori sheets on a clean surface, shiny side down.
Grab a handful of sushi rice and spread it diagonally across the nori sheet, leaving a small border at the top. Add a few slices of your freshly cut veggies on top of the rice.
Starting from the bottom corner, roll the nori sheet tightly around the filling, creating a cone shape. Wet the upper border of the nori sheet with a bit of water to seal the roll.
Repeat the process for the remaining nori sheets and filling ingredients. Once all the hand rolls are assembled, serve them with soy sauce, wasabi, and pickled ginger for dipping.
