In a mixing bowl, combine 1 cup of soaked cashews, 1/4 cup of maple syrup, 2 tablespoons of coconut oil, 2 tablespoons of instant coffee, 1 tablespoon of cocoa powder, and a pinch of salt. Blend until smooth and creamy.
Place the mixture in the refrigerator for about 30 minutes to firm up. Once chilled, scoop out small portions and roll them into bite-sized balls. Arrange the truffles on a baking sheet lined with parchment paper.
Sprinkle a generous amount of cocoa powder onto a plate. Roll each truffle in the cocoa powder to coat them evenly. Make sure they are fully covered in chocolaty goodness!
Transfer the truffles to an airtight container and let them set in the refrigerator for at least 2 hours. This step may require some patience, but trust us, it's worth it! Once fully chilled, take them out, pop one into your mouth, and experience pure bliss!
