In a bowl, mix 1 cup of plain yogurt, 2 tablespoons of gram flour, 2 tablespoons of oil, 1 tablespoon of ginger-garlic paste, 1 tablespoon of lemon juice, 1 teaspoon of cumin powder, 1 teaspoon of coriander powder, 1/2 teaspoon of red chili powder, 1/2 teaspoon of turmeric powder, and salt to taste. Crumble 250 grams of paneer into small cubes and add it to the marinade. Coat the paneer well and let it marinate in the refrigerator for at least 30 minutes.
Preheat your grill or oven to medium-high heat. Thread the marinated paneer cubes onto skewers, alternating with your favorite veggies like bell peppers, onions, and tomatoes. Brush the skewers with some oil to prevent sticking. Grill or bake the skewers for about 10-12 minutes, turning them occasionally, until the paneer is golden and slightly charred.
Garnish the paneer tikka skewers with fresh coriander leaves and sprinkle some chaat masala for an extra burst of flavor. Serve them hot with mint chutney or a squeeze of lemon juice. They make a perfect addition to your Thali or can be enjoyed as a standalone appetizer!
