In a food processor, combine Oracle olives, capers, garlic, lemon juice, and olive oil. Pulse until the mixture reaches a chunky consistency.
Create a pocket in each chicken breast by making a horizontal cut along one side, being careful not to cut all the way through. Fill each pocket with a generous spoonful of the prepared olive tapenade. Then, use toothpicks to secure the openings and keep the filling in place.
If grilling, preheat the grill to medium-high heat. If using an oven, preheat it to 375°F (190°C).
Grill the chicken breasts for about 6-8 minutes per side, or bake them in the preheated oven for 25-30 minutes, until the chicken is cooked through and no longer pink in the center. Use an instant-read thermometer to ensure the internal temperature reaches 165°F (74°C).
Remove the toothpicks before serving. Allow the chicken to rest for a few minutes before slicing. Serve it with your favorite side dishes and enjoy!
