Collect all the necessary ingredients for your Chickpea Curry. You will need 2 cups of cooked chickpeas, 1 onion (finely chopped), 2 cloves of garlic (minced), 1 tablespoon of ginger (grated), 1 can of diced tomatoes, 1 teaspoon of cumin powder, 1 teaspoon of coriander powder, 1/2 teaspoon of turmeric powder, 1/2 teaspoon of paprika, 1/4 teaspoon of cayenne pepper (optional for added heat), 1/2 cup of water, 2 tablespoons of oil, and a handful of fresh cilantro leaves (chopped) for garnishing.
Heat the oil in a large skillet or pan over medium heat. Add the chopped onion and cook until it becomes translucent and lightly browned. Stir in the minced garlic and grated ginger, and cook for another minute until fragrant.
Sprinkle in the cumin powder, coriander powder, turmeric powder, paprika, and cayenne pepper (if using). Stir well to coat the onion, garlic, and ginger with the aromatic spices. Let the spices cook for about 30 seconds to release their flavors.
Pour in the can of diced tomatoes, including the liquid. Stir everything together and let the mixture simmer for 5 minutes to allow the flavors to meld together.
Add the cooked chickpeas to the skillet, along with 1/2 cup of water. Stir well to combine all the ingredients. Reduce the heat to low, cover the pan, and let the curry simmer for 15-20 minutes, or until the sauce thickens slightly.
Once the Chickpea Curry is ready, remove it from the heat. Garnish it with freshly chopped cilantro leaves for a burst of freshness and added aroma. Serve the curry hot with steaming rice or naan bread. Enjoy!
