In a medium saucepan, combine 1 cup of water, 2 tablespoons of granulated sugar, 1/2 teaspoon of salt, and 1/2 cup of unsalted butter. Bring the mixture to a boil over medium heat, stirring occasionally. Once the butter has melted completely, remove the saucepan from heat. Gradually add 1 cup of all-purpose flour to the saucepan, stirring until the mixture forms a smooth dough.
Heat vegetable oil in a deep pan or fryer to 375°F (190°C). Transfer the prepared churro dough into a piping bag fitted with a star tip. Pipe 4-inch strips of dough directly into the hot oil, using a pair of scissors or a knife to cut the dough as you go. Fry the churros until golden brown, turning them occasionally for even cooking. Once done, remove the churros from the oil and place them on a paper towel-lined plate to absorb any excess oil.
In a shallow bowl, mix together 1/2 cup of granulated sugar and 2 teaspoons of ground cinnamon. Roll the fried churros in the cinnamon-sugar mixture until they are evenly coated on all sides. Set them aside to cool slightly.
Take a cooled churro and slice it horizontally. Place a scoop of your favorite ice cream flavor on one churro slice, then top it with another churro slice to create a sandwich. Repeat this process with the remaining churros.
