In a medium saucepan, combine 1 cup of water, 1/2 cup of unsalted butter, 1 tablespoon of granulated sugar, and a pinch of salt. Bring the mixture to a boil over medium heat, stirring until the butter melts completely.
Once the butter mixture is boiling, reduce the heat to low and add 1 cup of all-purpose flour. Stir vigorously until the mixture forms a smooth ball of dough.
Remove the saucepan from the heat and let the dough cool for a few minutes. Then, add 4 beaten eggs, one at a time, mixing well after each addition. The dough should become smooth and glossy.
Heat vegetable oil in a deep skillet or pot to 375°F (190°C). Fill a piping bag fitted with a star-shaped tip with the choux pastry dough. Pipe 4 to 5-inch long churros directly into the hot oil, using kitchen scissors to cut the dough. Fry until golden brown and crispy, approximately 3 minutes per side.
Remove the fried churros from the oil and drain on a paper towel-lined plate. While still warm, roll the churros in a mixture of 1/2 cup granulated sugar and 1 tablespoon of ground cinnamon until evenly coated.
