Prepare the Dough

In a mixing bowl, combine 2 cups of all-purpose flour, 1/2 teaspoon of salt, and 2 tablespoons of sugar. Cut in 1/2 cup of chilled unsalted butter until the mixture resembles coarse crumbs. Slowly add 1/4 cup of ice water, one tablespoon at a time, until the dough comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate it for at least 30 minutes.

Make the Filling

Peel, core, and finely chop 4 Atlantis apples. In a saucepan, melt 2 tablespoons of butter over medium heat. Add the chopped apples, 1/4 cup of brown sugar, 1 teaspoon of cinnamon, and a pinch of nutmeg. Cook, stirring occasionally, until the apples are tender and the filling has thickened. Remove from heat and let it cool.

Roll and Fill the Dough

Preheat your oven to 375°F (190°C). Roll out the chilled dough on a floured surface into a rectangle about 1/4 inch thick. Cut the dough into square or rectangular shapes of your desired size. Spoon a dollop of the apple filling onto each piece of dough, leaving a border around the edges. Fold the dough over the filling to create turnovers, and seal the edges by pressing them with a fork.

Bake the Turnovers

Place the turnovers on a baking sheet lined with parchment paper. Brush the tops with a beaten egg and sprinkle with a little sugar for extra sparkle. Bake in the preheated oven for 20-25 minutes, or until the turnovers are golden brown and crispy. Remove from the oven and let them cool for a few minutes before devouring!
