In a bowl, combine 1/4 cup of soy sauce, 2 tablespoons of brown sugar, 2 tablespoons of sesame oil, 2 cloves of minced garlic, and 1 tablespoon of grated ginger. Add 1 pound of thinly sliced beef and stir until the meat is well coated. Let it marinate in the refrigerator for at least 1 hour, but overnight is even better!
Heat a large skillet over medium-high heat. Add the marinated beef and cook for about 5-7 minutes, or until the meat is browned and cooked through. Remove the beef from the skillet and set it aside.
Spread a thin layer of mayonnaise on one side of each tortilla. This will help create a crisp and flavorful crust when cooking.
Place a tortilla, mayo side down, on a cutting board. Sprinkle a generous amount of shredded cheese on top. Add a portion of the cooked bulgogi, and then sprinkle more cheese on top. Top it off with another tortilla, mayo side up.
Heat a clean skillet over medium heat. Carefully transfer one assembled quesadilla to the skillet. Cook for about 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat the process with the remaining quesadillas.
Cut the cooked quesadillas into wedges and serve hot. You can enjoy them as they are or serve them with sour cream, salsa, or guacamole. Prepare to have your taste buds do a happy dance!
