Be careful not to use too much filling, or else it might ooze out and make a mess. Also, don't forget to have some napkins handy, because this stuffed French Toast can get a little messy!
In a bowl, mix together 4 ounces of cream cheese and 1/4 cup of diced strawberries. Mash them together until well combined. This will be the delicious filling for our stuffed French Toast!
Take 4 slices of bread and spread the cream cheese and strawberry mixture evenly on two of the slices. Top each with one of the remaining slices to create a sandwich.
In a shallow dish, whisk together 2 eggs, 1/4 cup of milk, and a pinch of cinnamon. Dip each sandwich into the egg mixture, making sure to coat both sides. Heat a skillet over medium heat and melt a pat of butter. Cook each stuffed French Toast for about 2-3 minutes on each side, until golden brown and crispy.
Once cooked, remove the stuffed French Toast from the skillet and let them cool for a minute or two. Cut each sandwich in half and serve with a sprinkle of powdered sugar and some extra diced strawberries on top. Grab your fork and dig in!
