First things first, let's gather all the ingredients you'll need. For this vegan Avocado Toast, you'll need two ripe avocados, two slices of your favorite bread, a handful of roasted vegetables (we love using cherry tomatoes and mushrooms), and a sprinkle of nutritional yeast.
Pop your bread into the toaster or toast it in a pan until it turns golden brown and crispy. You want your toast to have a nice crunch!
Take your ripe avocados, cut them in half, and remove the pit. Scoop out the creamy flesh into a bowl. Grab a fork and smash the avocados until you reach your desired level of chunkiness or smoothness. Add a pinch of salt and pepper to taste.
