Rinse 1 cup of sushi rice under cold water until the water runs clear. Then, cook the rice according to package instructions. Once cooked, transfer the rice to a bowl and let it cool completely.
Chop 1 cucumber, 1 carrot, 1 red bell pepper, and 1 avocado into thin matchstick-like strips. You can also add any other vegetables of your choice like purple cabbage or radishes for extra color and crunchiness.
Cut 200g of firm tofu into small cubes. In a pan, heat some oil over medium heat and add the tofu cubes. Cook until they are golden brown and crispy on all sides. Remove from heat and set aside.
In a small bowl, whisk together 2 tablespoons of soy sauce, 1 tablespoon of rice vinegar, 1 tablespoon of maple syrup, and 1 teaspoon of sesame oil. Adjust the quantities according to your taste preferences.
Take a bowl and add a bed of cooled sushi rice. Arrange the colorful vegetable strips, crispy tofu, and any other toppings you like on top of the rice. Drizzle the sauce over everything and get ready to experience a burst of flavors!
