In a food processor, pulse 1 ¼ cups of all-purpose flour, ¼ cup of powdered sugar, and a pinch of salt until combined. Add ½ cup of cold unsalted butter, cut into small pieces, and pulse until the mixture resembles coarse crumbs. Drizzle in 3-4 tablespoons of ice-cold water while pulsing, until the dough comes together. Flatten the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
Preheat your oven to 350°F (175°C). Roll out the chilled dough on a lightly floured surface to about 1/8 inch thickness. Using a Labyrinth-shaped cookie cutter, cut out as many shapes as you can from the dough. Carefully transfer the cutouts onto a parchment-lined baking sheet.
In a bowl, whisk together 3 beaten eggs, 1 cup of granulated sugar, 1/3 cup of freshly squeezed lemon juice, and the zest of 2 lemons. Add in 1/4 cup of all-purpose flour and 1/4 teaspoon of salt, and whisk until smooth and well combined.
Pour the lemon filling into each Labyrinth-shaped tart crust, making sure not to overfill. Bake in the preheated oven for 15-20 minutes, or until the filling is set and the edges are golden brown. Let the tarts cool completely. Optional: sprinkle powdered sugar on top to resemble the Goblin King's glittery mischief!
