In a blender, crush 10 graham crackers until they become fine crumbs. Mix in 3 tablespoons of melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
Preheat your oven to 350°F (175°C). Bake the crust in the preheated oven for 8-10 minutes or until lightly golden. Remove from the oven and let it cool completely.
In a mixing bowl, beat 16 ounces (450g) of cream cheese until smooth. Gradually add 1 cup of powdered sugar and continue beating until well combined. Mix in 2 teaspoons of vanilla extract. Set aside.
Remove the crust from the springform pan and transfer it to a serving dish. Spread the prepared cheesecake filling evenly over the crust. Arrange fresh sliced strawberries on top.
Using a blender or a shaved ice machine, crush about 2 cups of ice until you have fine, fluffy shaved ice.
Gently mound the shaved ice over the cheesecake filling and strawberries. Pack it lightly to create a beautiful dome shape.
Drizzle some strawberry syrup over the shaved ice. You can also garnish with additional freshly sliced strawberries and crumbled graham crackers if desired. Serve immediately and enjoy the heavenly Strawberry Cheesecake Bingsu!
