Start by gathering all the necessary items. You will need a heat-resistant silicone lollipop mold, lollipop sticks, granulated sugar, corn syrup, water, flavorings, food coloring (optional), and a candy thermometer.
In a large saucepan, combine 2 cups of granulated sugar, 1/2 cup of corn syrup, and 1/2 cup of water. Stir gently until the sugar dissolves. Place the candy thermometer in the mixture, making sure it doesn't touch the bottom of the pot.
Heat the mixture over medium heat until it reaches the hard crack stage, which is around 300°F (150°C) on the candy thermometer. Be patient, it may take a while. Avoid stirring the mixture during this process to prevent crystallization.
Once the syrup reaches the desired temperature, remove it from the heat and let it cool slightly. Add your desired flavorings (e.g., vanilla, strawberry, peppermint) and food coloring if you want a colorful lollipop. Mix well.
Carefully pour the syrup into the heat-resistant silicone lollipop mold. Fill each cavity completely, but be cautious of any potential spillage. Insert the lollipop sticks into the center of each cavity, making sure they are well-covered by the syrup.
Allow the lollipop to cool and harden completely in the mold. This may take several hours or overnight, depending on the size and thickness of your lollipop and the room temperature. Avoid touching or moving the mold during this time.
Once the lollipop is fully hardened, gently press on the back of the mold to release the giant lollipop. If it doesn't easily release, you can carefully flex the mold and apply light pressure until it pops out.
Admire your masterpiece and show off your giant lollipop to friends and family. Display it as a decorative centerpiece or use it as a prop for themed parties. Just remember, no licking!
