To make homemade lollipops, you will need the following ingredients: granulated sugar (1 cup), light corn syrup (1/2 cup), water (1/4 cup), flavor extract of your choice (1 teaspoon), food coloring (a few drops), lollipop sticks, and non-stick cooking spray.
Before you start, make sure you have a candy thermometer, a medium-sized saucepan, a silicone mat or greased baking sheet, and a lollipop mold (optional).
In the saucepan, combine the sugar, corn syrup, and water. Place the saucepan over medium heat and stir until the sugar has dissolved. Insert the candy thermometer into the mixture, making sure it doesn't touch the bottom of the pan. Let the syrup come to a boil without stirring.
Once the sugar syrup reaches a temperature of 300°F (150°C), remove it from the heat. Stir in the flavor extract of your choice and add a few drops of food coloring. Stir well to ensure even distribution of color and flavor throughout the syrup.
Carefully pour the hot syrup onto a silicone mat or greased baking sheet in small circles. Leave enough space between each circle to insert a lollipop stick. If you have a lollipop mold, lightly spray it with non-stick cooking spray and pour the syrup into each cavity. Insert the lollipop sticks into the syrup, twisting them slightly to ensure they are fully coated.
Allow the lollipops to cool completely at room temperature. This may take around 30 minutes to 1 hour, depending on the size of the lollipops. Avoid moving or touching them until they are completely set and hardened.
Once the lollipops have cooled and hardened, gently remove them from the silicone mat, greased baking sheet, or lollipop mold. Your homemade lollipops are now ready to be enjoyed! Share them with friends and family, or indulge in a nostalgic treat for yourself.
