Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Take those zucchinis and slice them into fry-like sticks. Trim off the ends and carefully cut each zucchini lengthwise into thin, even strips.
In three separate bowls, set up your coating station. Fill one bowl with flour, another with beaten eggs, and the last one with a mixture of bread crumbs, Parmesan cheese, garlic powder, and salt.
Now it's time to get messy! Dip each zucchini stick into the flour, then the beaten eggs, and finally into the breadcrumb mixture. Make sure to coat them evenly at each stage.
Arrange the coated zucchini fries in a single layer on the prepared baking sheet. Pop them into the preheated oven and bake for around 20 minutes until they turn golden and crispy.
Once the zucchini fries are done, take them out of the oven and let them cool slightly. Serve them up as a delicious appetizer or a side dish. Enjoy their crispy outer layer and the hidden healthy goodness inside!
