In a large mixing bowl, combine 1/2 cup of honey, 1/4 cup of unsalted butter (melted), and 1 teaspoon of vanilla extract. Stir until well combined.
Add 2 cups of old-fashioned rolled oats, 1/2 cup of chopped nuts (such as almonds or walnuts), 1/2 cup of dried fruit (such as raisins or cranberries), and 1/4 cup of shredded coconut to the bowl. Mix everything together until all the ingredients are evenly coated.
Line a reusable silicone baking sheet with parchment paper for easy removal later. Pour the granola mixture onto the sheet and press it down firmly to create an even layer. Use a spatula or the back of a spoon to smooth the surface.
Preheat your oven to 350°F (175°C) and bake the granola bars for 20-25 minutes, or until they turn golden brown on top. Keep a close eye on them to prevent overcooking. Once done, remove the baking sheet from the oven and let the bars cool completely.
Using a sharp knife, cut the cooled granola slab into bars of your desired size. Store them in an airtight container for up to one week. Enjoy!
