Gather and prepare all the ingredients: 2 pounds of beef chuck roast cut into cubes, 2 tablespoons of vegetable oil, 1 large onion chopped, 3 cloves of garlic minced, 4 carrots sliced, 4 potatoes diced, 2 celery stalks chopped, 4 cups of beef broth, 1 cup of red wine, 2 tablespoons of tomato paste, 1 teaspoon of dried thyme, salt and pepper to taste.
In a large pot, heat the vegetable oil over medium-high heat. Season the beef cubes with salt and pepper, then add them to the pot. Sear the beef on all sides until browned, about 5 minutes. Remove the beef from the pot and set it aside.
In the same pot, add the chopped onion and minced garlic. Cook until the onion is translucent, about 5 minutes. Add the carrots, potatoes, and celery, and sauté for another 5 minutes.
Pour in the beef broth and red wine, and then add the tomato paste and dried thyme. Stir well to combine all the ingredients.
Bring the stew to a boil, then reduce the heat to low. Cover the pot and let the stew simmer for about 2 hours, or until the beef is tender and the flavors have melded together.
Taste the stew and adjust the seasoning with salt and pepper if needed. Serve the Classic Beef Stew hot, garnished with fresh parsley if desired, and enjoy!
