In a large mixing bowl, combine 2 cups of all-purpose flour and 1/2 teaspoon of salt. Make a well in the center and slowly pour in 3/4 cup of warm water. Mix until a shaggy dough forms. Knead the dough on a lightly floured surface for about 5 minutes until smooth and elastic.
Wrap the dough in plastic wrap and let it rest for 30 minutes to allow the gluten to relax. After resting, divide the dough into 4 equal portions. Take one portion and flatten it with your hands. Using a pasta machine or a rolling pin, roll out the dough as thin as possible, about 1/16 inch thick.
Sprinkle some flour on top of the rolled-out dough to prevent sticking. Fold the dough sheet in half, then in half again. Use a sharp knife to cut the folded dough into thin slices, about 1/8 inch wide. Unfold the noodles and toss them with a little flour to prevent clumping. Repeat this process with the remaining dough portions.
Bring a large pot of water to a boil. Add the homemade ramen noodles and cook them for 2-3 minutes, or until al dente. Drain the noodles and rinse them with cold water to stop the cooking process. Serve the noodles in a delicious vegan ramen broth, topped with your favorite veggies and garnishes.
