Fire up the grill to medium-high heat. Remove the husks and silk from the corn, then brush each ear with a little olive oil. Place the corn on the grill and cook, turning occasionally, until nicely charred and tender, about 8-10 minutes. Remove from the grill and set aside to cool slightly.
In a small bowl, combine mayonnaise, lime juice, chili powder, and cayenne pepper. Mix well until all the ingredients are creamy and well incorporated. If you like it extra spicy, feel free to add more cayenne pepper!
Crumble the cotija cheese into a bowl and set aside. This salty and crumbly cheese will add the perfect touch to your tacos. You can also substitute it with feta cheese if you can't find cotija.
Take a warm tortilla and spread a generous amount of the spicy mayo on one side. Next, place a grilled corn on the mayo-covered side of the tortilla. Sprinkle the cotija cheese on top of the corn. Repeat with the remaining tortillas and filling.
