Start by preheating your oven to 375°F (190°C). We need to get it nice and toasty to cook these heavenly veggie meatballs!
In a mixing bowl, combine 2 cups of cooked quinoa, 1 cup of breadcrumbs, 1/2 cup of grated Parmesan cheese, 1/4 cup of finely chopped onion, 2 cloves of minced garlic, 2 tablespoons of tomato paste, 1 tablespoon of soy sauce, 1 teaspoon of dried oregano, and a pinch of salt and pepper. Mix everything together until well combined.
Now it's time to get your hands dirty! Take small portions of the mixture and roll them into meatball shapes. Place the meatballs on a baking sheet lined with parchment paper to prevent sticking.
Pop those meatballs into the preheated oven and bake for 20-25 minutes until they are golden brown and slightly crispy on the outside. Resist the temptation to snack on them while they bake!
While your meatballs are baking, cut your sub rolls horizontally, leaving the tops attached. Lightly toast the rolls to give them that perfect crunch.
Spread a layer of marinara or tomato sauce on each toasted sub roll. Arrange a few meatballs on each roll, then top with a sprinkle of shredded mozzarella cheese. You can also add some sliced bell peppers or jalapeños for an extra kick!
Preheat your broiler and place the assembled sliders on a baking sheet. Broil for 2-3 minutes, or until the cheese is melted and bubbly. Keep an eye on them, we don't want any burnt buns!
