Gather all the necessary ingredients for Winter Icicle Candy. You will need 2 cups of granulated sugar, 1/2 cup of water, 1/2 cup of corn syrup, 1/2 teaspoon of peppermint extract, and blue food coloring.
In a medium saucepan, combine the sugar, water, and corn syrup. Place the saucepan over medium heat and stir until the sugar has dissolved. Keep stirring until the mixture comes to a boil. Once it starts boiling, stop stirring and let the mixture reach a temperature of 310°F (155°C) on a candy thermometer. This will take about 10-15 minutes.
Remove the saucepan from heat and carefully stir in the peppermint extract. Be careful as the mixture will bubble up a bit. Add a few drops of blue food coloring and stir until well combined.
Prepare a baking sheet lined with parchment paper. Using a spoon or a candy dropper, drop small amounts of the sugar mixture onto the parchment paper in thin, icicle-like shapes. Work quickly as the mixture will start to harden as it cools.
Allow the icicles to cool completely at room temperature. This will take about 20-30 minutes. Once cooled, carefully remove them from the parchment paper.
Serve and enjoy your homemade Winter Icicle Candy. Store any leftovers in an airtight container to keep them fresh.
