1

Prepare the Matcha Crepe Batter

In a large mixing bowl, whisk together 2 cups of all-purpose flour, 2 tablespoons of matcha green tea powder, 1/4 cup of granulated sugar, and a pinch of salt. In a separate bowl, whisk together 3 cups of milk, 4 large eggs, and 2 tablespoons of melted butter. Gradually pour the wet ingredients into the dry ingredients, whisking until smooth and well combined.

2

Cook the Matcha Crepes

Heat a non-stick skillet or crepe pan over medium heat. Brush the pan with a little melted butter. Pour 1/4 cup of the batter into the pan, tilting and swirling it to evenly coat the bottom. Cook for about 1-2 minutes, until the edges are lightly golden and the center is set. Flip the crepe and cook for an additional 30 seconds. Transfer the cooked crepe to a plate and repeat with the remaining batter, stacking the crepes on top of each other.

3

Make the Matcha Green Tea Filling

In a mixing bowl, combine 2 cups of heavy cream, 1/4 cup of powdered sugar, 2 teaspoons of matcha green tea powder, and 1 teaspoon of vanilla extract. Whip the mixture with an electric mixer on medium-high speed until stiff peaks form. Be careful not to overmix.

4

Assemble the Crepe Cake

Place one crepe on a serving plate. Spread a thin layer of the matcha green tea filling evenly over the crepe. Repeat the process with the remaining crepes and filling, layering them on top of each other. Refrigerate the cake for at least 2 hours to set.

5

Serve and Enjoy

Remove the Crepe Cake from the refrigerator and let it sit at room temperature for a few minutes before slicing. Use a sharp knife to cut the cake into desired portions. Serve and enjoy the beautiful layers of matcha goodness!
