In a mixing bowl, combine 1 cup gluten-free flour, 1/4 cup cocoa powder, 1/2 cup coconut sugar, 1 teaspoon baking powder, and a pinch of salt. Mix them together until well combined.
Next, add 1/2 cup coconut milk, 1/4 cup melted coconut oil, 1 teaspoon vanilla extract, and 2 tablespoons maple syrup to the dry mixture. Stir until you have a smooth batter.
Preheat your oven to 350°F (180°C). Grease a doughnut pan with coconut oil. Fill each doughnut well with the batter until almost full. Bake for 12-15 minutes or until a toothpick comes out clean.
In a small saucepan, melt 1/4 cup coconut oil over low heat. Remove from heat and stir in 1/4 cup powdered sugar and 1/2 teaspoon coconut extract until smooth.
Once the doughnuts have cooled slightly, dip each one into the coconut glaze until fully coated. Let the excess glaze drip off, then place the doughnuts on a wire rack to set.
While the glaze is still sticky, sprinkle each doughnut with a generous amount of shredded coconut flakes. Let them sit for a few minutes until the glaze and coconut flakes set.
