Take note
Exercise caution when working with hot oil. Keep children and pets away from the cooking area.
In a mixing bowl, combine 1 cup of cornstarch, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper. Mix well until the ingredients are evenly incorporated.
Gradually add 3/4 cup of cold water to the cornstarch mixture while whisking constantly. Continue whisking until the batter is smooth and free of lumps.
In a deep frying pan, heat at least 2 inches of vegetable oil over medium-high heat. Use a candy thermometer to monitor the temperature and heat until it reaches 375°F (190°C).
Carefully dip a knife of your choice into the cornstarch batter, ensuring that the entire blade is coated. Gently place the coated knife into the hot oil and fry until golden brown and crispy, about 2-3 minutes per side.
