  • Vegan butter 1/2 cup
  • Granulated sugar 1/4 cup
  • Vegan cream cheese 1 package

  • Full-fat coconut milk 1 can
  • Vegan ladyfinger cookies Enough to layer

Prepare the Crunchy Crust

In a food processor, blend 2 cups of vegan graham cracker crumbs, 1/2 cup of melted vegan butter, and 1/4 cup of granulated sugar until it forms a crumbly mixture. Press the mixture firmly into the bottom of a pie dish.

Whip Up the Creamy Filling

In a mixing bowl, combine 1 package of vegan cream cheese, 1/2 cup of powdered sugar, and 1 teaspoon of vanilla extract. Mix until smooth and creamy. In a separate bowl, whip 1 can of full-fat coconut milk until fluffy. Gently fold the whipped coconut milk into the cream cheese mixture.

Layer It Up

Spread a layer of the creamy filling on top of the crunchy crust. Dip vegan ladyfinger cookies into a mixture of 1 cup of brewed coffee and 2 tablespoons of coffee liqueur (optional). Arrange the soaked cookies on top of the creamy filling. Repeat the layers until you run out of ingredients, making sure to finish with a layer of the creamy filling.

Chill and Sprinkle

Cover the pie with plastic wrap and refrigerate for at least 2 hours, or until firm. Just before serving, dust the top with a generous sprinkle of cocoa powder for that final touch of yumminess.
