Be careful when handling hot grill and skewers. Make sure to marinate the chicken thoroughly and cook it to a safe internal temperature.
In a bowl, mix together 1/2 cup of soy sauce, 1/4 cup of mirin, 2 tablespoons of brown sugar, 2 cloves of minced garlic, and 1 teaspoon of grated ginger. Add 1 pound of chicken thigh meat, cut into bite-sized pieces, and let it marinate in the fridge for at least 30 minutes.
Preheat your grill to medium heat. If using charcoal, make sure the coals are ashed over. If using a gas grill, preheat it to medium heat.
Thread the marinated chicken pieces onto skewers, making sure there is enough space between each piece. This will help the chicken cook evenly.
Place the skewers on the grill and cook for about 4-5 minutes per side, or until the chicken is cooked through and slightly charred. Brush some of the leftover marinade onto the chicken while grilling for an extra burst of flavor.
Once the chicken is cooked, remove the skewers from the grill and let them rest for a minute. Serve the teriyaki chicken skewers hot, garnished with sesame seeds and chopped green onions. Enjoy them with a side of steamed rice and a smile on your face!
