In a bowl, combine 1 cup of soy sauce, 1/2 cup of brown sugar, 1/4 cup of honey, 2 minced garlic cloves, and 1 tablespoon of grated ginger. Mix well until the sugar has dissolved. Add 1.5 pounds of boneless chicken, cut into cubes, and marinate in the refrigerator for at least 1 hour, or overnight for maximum flavor.
Fire up the grill to medium-high heat. If using charcoal, make sure the coals are gray and glowing. If using a gas grill, preheat for about 10 minutes with the lid closed. This will ensure an even cooking temperature.
Remove the chicken from the marinade and discard the excess liquid. Thread the chicken onto skewers, leaving a small gap between each piece for even cooking. If using wooden skewers, make sure to soak them in water for about 30 minutes prior to threading.
Place the skewers on the preheated grill and cook for 8-10 minutes, turning occasionally, until the chicken is cooked through and nicely charred. Brush the chicken with some of the remaining marinade during the last few minutes of grilling for extra flavor.
Carefully remove the skewers from the grill and place them on a serving platter. Sprinkle with chopped green onions and sesame seeds for a garnish. Serve your succulent teriyaki chicken skewers with steamed rice or grilled pineapple for a complete Hawaiian feast!
