Start by cutting off the top of a large onion and peeling off the skin. Place the onion flat-side down and make vertical cuts towards the center, about 1/4 inch apart. Be careful not to cut all the way through!
Carefully separate the onion petals and stuff them with your favorite shredded cheese. Cheddar, mozzarella, or a combination of cheeses work great. Don't be shy with the cheese, the more, the merrier!
In a bowl, whisk together 1 cup of all-purpose flour, 1 teaspoon of paprika, 1/2 teaspoon of garlic powder, and a pinch of salt. Add enough cold water to make a thick batter. Dip the stuffed onion into the batter, coating it evenly.
Heat about 2 inches of vegetable oil in a large pot or deep fryer to 375°F. Carefully lower the battered onion into the hot oil, petals-side down. Fry for about 4 to 5 minutes, until golden brown and crispy. Use tongs to gently flip the onion halfway through.
Once the blooming onion is golden and crispy, carefully remove it from the oil and let it drain on a paper towel-lined plate. Sprinkle with a bit of salt to enhance the flavors. Serve it hot with your favorite dipping sauces!
