In a large bowl, combine 2 cups of all-purpose flour, 1 tablespoon of sugar, and a pinch of salt. Cut in 1 cup of cold vegan butter until the mixture resembles coarse crumbs. Gradually add 1/2 cup of ice-cold water while mixing, until the dough comes together. Divide the dough in half and shape each portion into a flat rectangle. Wrap them in plastic wrap and refrigerate for at least 1 hour.
In a saucepan, combine 2 cups of your favorite fruit (such as berries or apples), 1/4 cup of sugar, 2 tablespoons of lemon juice, and 2 tablespoons of cornstarch. Cook over medium heat, stirring constantly, until the mixture thickens. Remove from heat and let it cool.
Preheat your oven to 375°F (190°C). On a floured surface, roll out one portion of the dough into a large rectangle, about 1/8 inch thick. Cut the dough into smaller rectangles, around 3x4 inches in size.
Place a spoonful of the fruit filling in the center of half of the dough rectangles. Brush the edges with water, then place a second rectangle of dough on top. Use a fork to press the edges together, sealing the pop tart. Transfer the pop tarts onto a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until golden brown.
