Gather your ingredients: 1 pound of beef (cubed), 1 onion (sliced), 3 cloves of garlic (minced), 1 thumb-sized ginger (grated), 2 tablespoons of red curry paste, 1 can of coconut milk, 2 tablespoons of soy sauce, and salt to taste.
In a large pan over medium-high heat, brown the beef cubes until they have a nice sear on all sides. This will give your Beef Rendang some extra flavor!
Add the sliced onion, minced garlic, and grated ginger to the pan. Sauté until fragrant, about 2-3 minutes.
Stir in the red curry paste and cook for another minute to release its flavors.
Reduce the heat to low and pour in the coconut milk. Add the soy sauce and season with salt to taste. Simmer uncovered for 15-20 minutes, or until the sauce has thickened.
