Gather the following ingredients: 1 cup cooked quinoa, 1 cup roasted vegetables (such as sweet potatoes, cauliflower, or broccoli), 1 cup fresh greens (such as spinach or kale), 1/2 cup chickpeas, 1/4 cup sliced avocado, and 2 tablespoons of your favorite dressing.
If you don't have cooked quinoa on hand, follow the package instructions to cook 1 cup of quinoa. Set aside.
Preheat your oven to 425°F (220°C). Toss your favorite vegetables in olive oil, salt, and pepper. Roast them on a baking sheet for 20-25 minutes or until tender and slightly caramelized. Set aside.
In a skillet, heat a little oil over medium heat. Add the fresh greens and sauté for a couple of minutes until wilted. Remove from heat and set aside.
In a bowl, start with a base of cooked quinoa. Arrange the roasted vegetables, sautéed greens, chickpeas, sliced avocado, and any other toppings you desire. Drizzle your favorite dressing over the top.
