Cook the sushi rice according to the package instructions. Once cooked, transfer it to a large bowl and let it cool slightly.
In a small bowl, mix together rice vinegar, sugar, and salt until the sugar and salt dissolve. Pour the seasoning mixture over the slightly cooled sushi rice and gently toss to coat.
Prepare the fillings for your Mexican sushi rolls. You can use ingredients like avocado, cooked shrimp, cucumbers, and sliced jalapenos. Get creative and add your favorite Mexican-inspired ingredients!
Place a sheet of nori (seaweed) on a bamboo sushi mat or a clean kitchen towel. Wet your hands with water to prevent sticking, then grab a handful of the seasoned sushi rice and spread it evenly over the nori, leaving a small border at the top.
Line up your fillings in the center of the rice. Be generous but don't overstuff, as it can make rolling difficult. Start with a layer of avocado, followed by your choice of fillings. Add a sprinkle of sesame seeds for extra flavor!
Carefully lift the edge of the bamboo mat or towel closest to you, and begin rolling it away from you, using your fingers to hold the fillings in place. Press down gently to ensure a tight roll. Repeat until the entire roll is tightly sealed.
Using a sharp knife, slice the Mexican sushi roll into bite-sized pieces. Wipe the knife clean between each slice to ensure neat cuts. Serve the sushi rolls with soy sauce, pickled ginger, and wasabi for an authentic touch.
