First, gather all the ingredients you'll need: 8 ounces of rice noodles, 2 tablespoons of vegetable oil, 2 cloves of minced garlic, 1 cup of bean sprouts, 1/2 cup of diced tofu, 1/4 cup of chopped roasted peanuts, 2 tablespoons of fish sauce, 2 tablespoons of tamarind paste, 2 tablespoons of sugar, 2 tablespoons of lime juice, 2 eggs, 1/4 cup of chopped green onions, and 1/4 cup of chopped cilantro.
Place the rice noodles in a bowl and cover them with hot water. Let them soak for about 10-15 minutes or until they become soft and pliable. Drain the noodles and set them aside.
Heat a tablespoon of vegetable oil in a wok or large skillet over medium heat. Once the oil is hot, add the minced garlic and stir-fry for about 30 seconds until fragrant.
Push the garlic to one side of the wok and add the diced tofu to the empty space. Stir-fry the tofu for a few minutes until it starts to brown. Then, add the shrimp and cook for another 2-3 minutes until they turn pink and opaque.
In a small bowl, mix together the fish sauce, tamarind paste, sugar, and lime juice until well combined. Set the sauce aside for later.
Push the tofu and shrimp to one side of the wok and crack two eggs into the empty space. Scramble the eggs with a spatula until they are fully cooked and scrambled.
Now, add the softened rice noodles to the wok along with the sauce you prepared earlier. Use a pair of tongs to toss everything together, ensuring that the noodles are evenly coated with the sauce.
Add the bean sprouts, chopped green onions, and chopped cilantro to the wok. Give everything a final toss to combine all the flavors. Cook for an additional 1-2 minutes until the bean sprouts have slightly wilted.
Transfer the Pad Thai to serving plates and garnish with a sprinkle of chopped roasted peanuts. Squeeze some fresh lime juice over the top for an extra burst of citrusy flavor. Now, dig in and enjoy the delicious taste of homemade Pad Thai!
