Take note
Please be cautious with hot surfaces and open flames. Also, be careful when flipping your pancakes so you don't accidentally flip them onto the floor (or your face!). And as always, make sure to supervise children in the kitchen to avoid any pancake-related disasters.
In a large mixing bowl, combine 1 and a 1/2 cups of all-purpose flour, 2 tablespoons of sugar, 2 teaspoons of baking powder, and a pinch of salt. Give it a good stir to make sure everything is mixed together.
In a separate bowl, beat 2 large eggs and add 1 and 1/4 cups of milk, 2 tablespoons of melted butter, and 1 teaspoon of vanilla extract. Whisk everything together until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Don't overmix! Heat a non-stick pan or griddle over medium heat and pour about 1/4 cup of batter onto the pan for each pancake. Cook until bubbles form on the surface and the edges start to look set, then flip the pancakes and cook for another minute or so.
Once your pancakes are cooked, it's time to stack them up! Place one pancake on a plate and drizzle some maple syrup or your favorite sweet sauce over it. Sprinkle a bit of powdered sugar or cinnamon on top for an extra touch of sweetness. Repeat this layering process until you have a stack of delicious pancakes.
