To make Rogan Josh, you'll need: 500g of boneless lamb, cut into bite-sized pieces; 2 tablespoons vegetable oil; 2 medium onions, finely chopped; 4 garlic cloves, minced; 1-inch piece of ginger, grated; 2 teaspoons ground cumin; 2 teaspoons ground coriander; 1 teaspoon turmeric powder; 1 teaspoon paprika; 1/2 teaspoon chili powder (adjust to taste); 1/2 teaspoon ground cardamom; 3 tomatoes, pureed; 1 cup plain yogurt; salt to taste; fresh cilantro for garnish.
In a large bowl, mix the yogurt, ginger, garlic, cumin, coriander, turmeric, paprika, chili powder, and cardamom. Add the lamb pieces and coat them well with the marinade. Cover the bowl and let the lamb marinate in the refrigerator for at least 2 hours (or overnight for maximum flavor).
Heat the vegetable oil in a deep pan over medium heat. Add the chopped onions and cook until they turn golden brown and caramelized, stirring occasionally. This will take around 10 minutes.
Once the onions are caramelized, add the minced garlic and continue cooking for another minute. Then, add the pureed tomatoes and cook for a couple of minutes until the oil starts to separate from the sauce. Now, it's time to add the ground cumin, ground coriander, turmeric, paprika, and chili powder. Give it a good mix and let the spices cook for about a minute.
Add the marinated lamb to the pan, including any remaining marinade. Season with salt to taste. Stir well to combine the lamb with the sauce. Reduce the heat to low, cover the pan, and let the Rogan Josh simmer gently for about 1.5 to 2 hours, or until the lamb is tender and the flavors have melded together.
Once the Rogan Josh is cooked to perfection, remove it from the heat. Serve hot with steamed rice or naan bread. Sprinkle some freshly chopped cilantro on top for a burst of freshness and enjoy the mouthwatering combination of flavors!
