In a bowl, mix together finely chopped walnuts, almonds, pistachios, sugar, ground cinnamon, and a pinch of salt. Set aside for later.
In a large bowl, combine melted vegan butter or coconut oil with water, maple syrup, lemon juice, and a hint of vanilla extract. Gradually add flour and knead until you have a soft, pliable dough.
Preheat your oven to 350°F (175°C). Roll out the dough into a thin sheet, then cut it to fit your baking dish. Brush the bottom of the dish with vegan butter or oil, and layer the dough sheets, brushing each layer with more butter. Spread a generous amount of the nut filling on top of each layer, then repeat the dough and nut layering until you run out of ingredients. Finish with a final layer of dough.
Using a sharp knife, score the top layer of the unbaked Baklava to create diamond or square shapes. Bake in the preheated oven for 45-50 minutes, or until golden and crispy.
While the Baklava is baking, combine sugar, water, and lemon juice in a saucepan over medium heat. Stir until the sugar dissolves, then let it simmer for a few minutes to create a sugar syrup. Once the Baklava is out of the oven, immediately pour the warm sugar syrup over the hot pastry. Let it cool and absorb the syrup for at least 4 hours, or overnight for the best flavor and texture.
