Start by gathering all the ingredients you'll need: 1 cup of flour, 1 tablespoon of sugar, 2 teaspoons of baking powder, a pinch of salt, 1 cup of plant-based milk, 2 tablespoons of vegetable oil, and 1 teaspoon of vanilla extract.
In a mixing bowl, combine the flour, sugar, baking powder, and salt. Mix well to ensure all the dry ingredients are evenly distributed.
Create a well in the center of the dry ingredients and pour in the plant-based milk, vegetable oil, and vanilla extract. Stir everything together until you have a smooth batter.
Allow the batter to rest for about 5-10 minutes. This will help the baking powder activate and create those fluffy pancakes we all love!
Heat a non-stick pan or griddle over medium heat. If needed, lightly grease the surface with some vegetable oil or cooking spray.
Using a ladle or a measuring cup, pour about 1/4 cup of batter onto the preheated pan. Cook until bubbles form on the surface of the pancake, then carefully flip it over with a spatula. Cook for another minute or until golden brown.
