Delight your senses with our heavenly Thai Mango Sticky Rice recipe. It's a blissful combination of sweet mangoes, sticky rice, and creamy coconut. Pure mango bliss!
Take note
Be careful not to overcook the rice or it will become mushy. Also, make sure to use ripe and sweet mangoes for the best flavor!
Rinse 1 cup of sticky rice under cold water until the water runs clear. Soak the rice in water for at least 2 hours or overnight. Drain the rice and place it in a steamer basket lined with cheesecloth. Steam the rice over medium heat for 30-35 minutes or until tender and cooked through.
In a saucepan, combine 1 cup of coconut milk, 1/4 cup of sugar, and a pinch of salt. Heat the mixture over medium heat, stirring occasionally, until the sugar has dissolved. Remove from heat and set aside to cool.
Peel and slice 2 ripe mangoes. You can either cut them into cubes or create beautiful mango fans by making thin slices on one side and then pushing the center of the mango up to create a fan shape.
Fluff the cooked sticky rice with a fork and transfer it to a serving plate. Pour half of the coconut sauce over the rice and gently mix to coat. Let the rice absorb the sauce for a few minutes. Arrange the sliced mangoes on top of the rice. Serve the remaining coconut sauce on the side for drizzling.
